Hawaiian Chili

(WZZM) -- Nothing beats a warm bowl of chili on a snowy day. Chef Brech of FOODesign in Grand Rapids stopped by the WZZM13 studios, to put a sweet and spicy spin on that classic dish: Hawaiian Chicken Chili.

HAWAIIAN CHICKEN CHILI

1 Tablespoon Butter

2 Boneless skinless chicken breasts, diced

1 medium white onion

1 tablespoon minced fresh garlic

1/2 green pepper, diced small

6 oz. pineapple chunks

15 oz. diced tomatoes in juice

15 oz. crushed tomatoes

1 cup pineapple juice

15 oz. kidney beans

15 oz. black beans, drained

1 cup bbq sauce

1/2 cup brown sugar

1 tablespoon each: red pepper flakes, ground cumin, Cajun seasoning, vanilla extract

1/2 tablespoon each: ground ginger, chili powder

 

1. Melt butter in stock pot, and add diced chicken breast

2. Add onion, garlic, and green pepper and cook until tender

3. Add pineapple, tomatoes, beans, BBQ and juices

4. Bring to a boil, stirring often

5. Let simmer for 20-25 minutes

6. Add brown sugar, red pepper flakes, and cumin

7. Let simmer for an additional 10-15 minutes

8. Ladle chili into a bowl, and top with shredded cheese and sour cream.

9. Enjoy!
