Sunday Beef Roast (Can also be made in a Crock Pot)
1 Beef Roast, Chuck, English or London Broil
1 pkg. Onion Soup Mix
Pepper- to taste
1-1 ½ cups cold water
Onions-peeled & quartered
Potatoes-washed & halved if large
Carrots- washed & cut in large pieces (no need to peel)
Fresh Mushrooms- sliced (optional)
2 tablespoons Butter (softened) & 2-3 tablespoons Flour
This is my favorite way to cook this:
Brown the Roast in a little oil & butter on both sides until nicely browned. This does not take long but well worth doing. Gives so many flavors to the finished dinner.
Place the browned Roast in a roasting pan, sprinkle with the soup mix; add the water & all the vegetables. Put the covered pan into a 350 degree oven and forget about it for 2 ½ or 3 hours.
Mash the butter & flour together and add to the juice/drippings in the pan, stirring to blend, after removing ingredients.
