Morel Bruschetta Treetops Style

-1lb. fresh morels
-1tbl. Minced shallots
-1tbl. Minced garlic
-1/4lb. butter
-12oz. crusty baguette cut into 1inche slices
-1/2 cup of mushroom duxelles
-1/4 white wine
- s&p to taste

Method for morels
In a medium sauce pan preheat over medium high for 1 minute then add ½ of the butter. When the butter is melted add the morels, garlic, and shallots and sauté for 4-5 minutes per side. Then deglaze the pan with white wine and reduce liquid for 2-3 minutes or until the liquid has almost completely evaporated, then fold in the remaining butter.

Recipe for duxelles
-1 1/2lb. minced domestic mushrooms
-1/2 cup sweet marsala wine
-1 tbl. Minced shallots
-1 tbl. Minced garlic
-1 tsp. chopped fresh thyme
-1/4 cup heavy cream
-2 tbl. butter
- s&p to taste

Method
In a medium sauté pan preheat over medium heat for 1 minute then add butter and when the butter has melted add the mushrooms, garlic, and shallots and cook for approximately 15-20 minutes or until mushrooms have cooked down and liquid is almost gone. Now add the white wine, cream, s&p and thyme and cook for approximately 15 minutes until liquid is almost gone. Remove from heat and chill.

Treetops Spectacular Asparagus & Morel Linguine

-1lb. morels washed and split
-1 cup blanched asparagus tops
-1lb. fresh linguine
-1tbl. Minced ramps
-1tbl. Minced roasted garlic
-2tbl. Butter
-1tsp. chopped parsley
-1tsp. chopped chives
-1/4 white wine
-2tbl. Extra virgin olive oil
- salt & pepper to taste

Method
In a large sauté pan preheat over medium high heat and add olive oil. After the pan is preheated for approximately 1 minute add morels, ramps, and garlic and sauté morels on both sides for approximately 4-6 minutes then add asparagus and cook for another 2-3 minutes. Now deglaze pan with white wine and reduce liquid for 2 minutes the remove from heat and fold butter in and set atop of your pasta.

Michigan Morels & Cream

-1lb. morels washed and split
-1tbl. Minced garlic
-1tbl. Minced shallots
-1/4lb. butter
-1cup veal demi glace
-1/2 cup white wine
-1/2 cup heavy whipping cream
- s&p to taste
-1/2 tsp. chopped fresh thyme
-1/2 tsp. chopped fresh parsley
-1/2 tsp. chopped fresh chives
-1/2 cup chicken stock

Method
In a 2 quart sauce pot preheat over medium for approximately 1 minute then add ½ the butter and melt. Then add the shallots and garlic and sweat until translucent then add the morels and deglaze with white wine, and demi then simmer for 10 minutes. Now add the cream, remaining butter, herbs, and s&p then simmer for 10 minutes and ready to serve with almost any dish using any of the following proteins, poultry, beef, veal, pork, and pasta.
