Take Five Berry Poppy Seed Dressing/Marinade - 7/9/2013

1/2 cup white balsamic vinegar
½ cup honey
1-2 garlic cloves, minced
1 tbsp onion, minced
1 tsp salt
1 tsp course ground black pepper
1 ½ cups chopped berries (blue, black, strawberry)
2/3 cup vegetable or canola oil
2 tsp poppy seeds

Try this over wilted greens (collard, Swiss Chard, kale)

Combine the vinegar, honey, garlic, onion, salt, pepper, and berries in the jar of a blender. Or combine ingredients in a bowl and use a hand blender.
Blend until smooth and then, with the blender running, add the oil in a steady stream.
Turn off the blender and whisk in the poppy seeds.
Refrigerate for at least an hour before serving.

This recipe is a great marinade for chicken or steak. It also makes a great salad dressing.
Keeps in the refrigerator for up to seven days.
