Cooking with Kal: Butternut Squash Soup

(WZZM) - Gloomy weather means it's time to make some homemade soup. Here is Kal's recipe for her Butternut Squash Bisque.


3-4 Butternut gourds - peeled, seeded and cut into bite size pieces

2 Yellow onions- peeled & cut up

2 Apples- peeled, cored and cut up

3 Tablespoons olive oil

Salt & pepper

2-4 Cups chicken stock

1/2 Teaspoon curry powder


1. Oil a sheet pan and put the squash, onion and apple on it. Sprinkle with olive oil and salt & pepper. Toss together with your hands, and then put into the oven for 35-45 minutes.

2. Simmer 2-3 cups of the chicken stock. When the veggies & apple are done, put them in the stock and use an immersion blender and use to make a smooth soup. You could also use a food processor to blend the veggies and apple. Add the curry powder, 1 teaspoon salt & ½ teaspoon pepper. Taste to adjust the seasoning.

3. For a creamy soup, add 1 cup of half and half.

4. Serve warm but never boil.
