Cream of Potato Soup with Smoked Sausage
Peel potatoes, cut into small cubes, cover with cold water, add some salt, cover and cook over med heat until done, about 15 minutes. Drain the potatoes but keep the water.
1 large Chopped Onion
1 cup Chopped Celery
1 cup Chopped Carrots
2-3 cloves Fresh Garlic-chopped fine
1 stick Butter
Melt butter in a kettle on med heat and add the onions and celery; cook until the onion is transparent but do not brown. Add:
¼ - ½ cup Flour
Stir in the flour and cook a couple minutes to get rid of the raw taste of flour. This is the thickener for the soup.
Smoked Sausage-cut up
Salt & Pepper
Add milk, a couple cups at a time, stirring to make a smooth soup. Then continue to add the potatoes, sausage and salt & pepper, to taste. Heat until sausage is heated through, never boil
