Trillium Haven transitions to Terra GR

(WZZM) Grand Rapids, Mich. - West Michigan's Trillium Haven is undergoing some changes to re-open it's doors as Terra GR.

The Grand Rapids eatery is taking a new direction which means some new tasty menu options.

Terra GR will use all locally grown and sustainable ingredients in their new menu. One new ingredient - pasta made sans eggs to offer yet another vegan option.

Chef Joel Wabeke heads up the kitchen at Terra GR and in the video link above he uses that vegan pasta to create a few different dishes sure to satisfy.

The recipe is below.

- 12 oz. of your favorite dried pasta
- Walnut pesto as needed (see recipe)
- 4-8oz greens (steamed)
- 3oz Sar Vecchio (or Parmesan)
- 1 oz charred kale

Walnut pesto:
- 3oz basil
- 1/2 cup olive oil
- 1/4 cup toasted walnuts
- 2 cloves garlic
- 2 T lemon juice

Combine cooked pasta, pesto, steamed greens.
Top with Sar Vecchio and charred kale. Serve.
