Take Five Mr. Brickley's Lemon Pecan Chess Pie - 2/21/2013

Filling
1/4 cup butter, melted
1/2 cup sugar
1 cup brown sugar
1/8 teaspoon salt
3 eggs
1½ tablespoon flour
1/2 cup evaporated milk

1 cup toasted, chopped pecans
Zest of 1 lemon
Juice of 1 lemon

In large bowl combine butter, sugar, brown sugar, salt and eggs. Mix by hand until ingredients are combined. Add flour, cream, ¾ cup pecans, lemon zest and lemon juice. Continue to mix by hand until ingredients are well mixed.

Pour into pie crust and bake for 45 minutes until pie is set in the middle.

Lemon Glaze
¼ cup powdered sugar
Zest of ½ lemon
1 tablespoon of freshly squeezed lemon juice
¼ teaspoon of lemon extract
¼ cup chopped pecans

Mix powdered sugar, zest of ½ lemon, lemon juice and lemon extract in medium bowl with a whisk until smooth. While pie is still warm, drizzle lemon glaze over entire surface. Sprinkle with chopped pecans.
