Melted Snowman Cookies
Cut Out Cookies:
2 3/4 cups all purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 ½ cups granulated sugar
1 ½ teaspoons vanilla extract
½ teaspoon almond extract
Simple Glaze Frosting:
2 cups powdered sugar
1 teaspoon vanilla extract
3 Tablespoons water
Jet puffed marshmallows (for the snowmen heads)
Thin pretzel sticks (for the snowmen arms)
Fruit roll ups (to make scarves)
Chocolate frosting (for eyes)
Orange frosting (for carrot nose)
Preheat oven to 400 degrees.
In a mixing bowl, combine flour, baking powder and salt. In another mixing bowl, add softened butter and sugar and mix in an electric mixer until fluffy. Add egg and extracts to creamed butter and sugar and mix well. Add flour mixture slowly while mixing. Scrape sides of bowl if necessary. When dough forms a ball, remove dough from mixing bowl. Divide dough into 2 equal balls.
On a lightly floured surface, roll divided dough into about a 12 inch diameter each, about ¼ inch thick. Cut 3 to 4 inch circles in the dough using a cookie cutter or a clean cup. Place cut out cookies on an ungreased cookie sheet. Bake at 400 degrees for about8 minutes, or until cookies turn a very light brown. (Note: Baking time depends on how thick or thin dough is rolled. Thicker dough can take 10 minutes to cook and dough rolled thin can cook in 5 minutes.)
Remove cookies from baking sheet and place on a wire rack to cool before decorating.
To decorate:Mix the ingredients for Simple Glaze Frosting until smooth. Spoon glaze onto cookies to look like a small puddle. Place two frosting dots on a large marshmallow and place over puddle of glaze on cookie. Break a small pretzel stick in half and place each half on sides of marshmallow. Cut at long thin piece of fruit roll up for the scarf and wrap around marshmallow. Add a thin strip of orange frosting for the carrot nose.
