What's Cooking: Catfish and Grits with Watermelon Salad

4 Catfish Filets
4 Tbsp Cajun Seasoning
2 Tbsp Olive Oil

Heat oil in skillet. Dredge fillets in seasoning and fry on both sides, approximately 4 minutes total. Serve over Parmesan Grits and garnish with Watermelon Salad.

Parmesan Grits
¾ C Hominy Grits
3 ½ C Water or Vegetable Stock
4 Tbsp cold Butter
4 Tbsp grated Parmesan Cheese

Add grits to boiling stock and cook, stirring continuously for 20 minutes. Remove grits from heat and beat in butter and cheese with wooden spoon.

Watermelon Salad
1 C chopped fresh Watermelon
1 C chopped seedless Cucumber
¼ C chopped fresh Mint
2 Tbsp Balsamic Vinegar
