Take Five Sports Night Crockpot Chicken - 5/21/2013

2-3 lbs. frozen, skinless chicken breasts
2 packets of taco seasoning
1 can of pinto beans
1 can of kidney beans
1 can of black beans
1 can of fire-roasted tomatoes
1 can of corn (optional)
1 small can of green chiles

Line the bottom of your crock with frozen breasts and cover with one packet of seasoning. Add drained and rinsed beans, tomatoes, corn, and chiles. Cover with second packet of seasoning. Cook on low for 7-8 hours. When it's done, I prefer to shred the chicken with two forks and mix it up, this absorbs some of the moisture and makes it less soupy.

This meal comes out to just over 23 calories per ounce. I round it up to 25/oz just to err on the side of caution, but you can eat 8oz for only 200 calories! I loaded it up with a fistful of romaine (which has minimal calories) one serving of shredded cheese and a dollop of sour cream! (Daisy regular has the fewest ingredients, so that's what I use)

Event: White lake Community Education - Sports and Shorts, free summer program for kids that takes place July 8th-August 1st in various parks in Muskegon, Montague, Rothbury, Holton, Twin Lake and Whitehall. Sports and Shorts is a fun organized activity and sports program to get kids out of the house exercising their bodies and minds with cool outdoor activities and crafts. It runs from 9am-noon, Monday through Thursday on the dates above. Each staff member is CPR/First Aid certified.
