Celebrating Summer Herbs
Arugula, Basil, Mint & Almond Pesto

Pesto with Arugula + Basil + Mint + Almonds
2 cups arugula
3/4 cup basil leaves
1 garlic clove
½ cup mint
½ cup slivered almonds
½ cup olive oil
s & p

1. Puree basil, arugula and mint in a food processor with a garlic clove, a little parsley, and slivered almonds.
2. Drizzle in olive oil, salt and a lot of ground pepper.

Applications:
• Pasta w/fresh mozzarella and tomatoes
• Flatbread with mozzarella and shrimp
• Freeze pesto to add to sauces
• Grilled Pesto Shrimp Kabobs
