Farm Fresh Peach Cobbler
From the Spinnaker Restaurant (Restaurant Week Grand Rapids 2013)
2 quarts peaches, sliced
1 box puffed rice cereal, 18oz
1 pound brown sugar
1 tablespoon ground cinnamon
8oz softened unsalted butter
Arrange peaches in bottom of baking pan.
In a separate bowl mix remaining ingredients until uniform consistency.
Layer crust over peaches evenly.
Bake at 350 degrees 25-30 minutes until crust is nicely brown and bubbly from peaches.
Top with Palazzolo's Vanilla Gelato.
