Get Fit: Tomato Soup for the Fall

(WZZM) - Summer has ended and with it tomato season, but what do you do with all of those leftovers from the garden?

Amy Sherman with Spartan Stores shows you a recipe for tomato soup in this edition of Get Fit that's also perfect for keeping you warm.

Tomato Soup

Ingredients:
-
about 5 pounds of tomatoes, cored
- 1 large yellow onion
- 2 cloves garlic
- 1 red bell pepper
- zest of half an orange
- 1 tsp worcestshire sauce
- 1 tsp Tabasco sauce
- 1 cup water
- 2 Tablespoons olive oil
- salt and pepper
- juice of one orange

Directions:
Place all of the ingredients into a large soup pot. Bring up to a simmer, and cook until every thing is soft, and the soup is thickened. Puree the soup using an immersion blender. Strain the soup if you'd like it really smooth. Season the soup with the orange juice and lots of salt and pepper.

Serve the soup with any type of topping. Ideas include cooked shrimp or chicken, black beans, fresh spinach, fresh basil, crumbled cheese.
