HANNUKAH APPLE RAISIN KUGEL (The Festival Of Lights For 8 Crazy Nights)
1 (16 oz) pkg. Wide EGG noodles
3/4 Cup butter (one and a half sticks)
1/2 Cup Sour Cream (Not Low Cal)
5 eggs whisked together
1 ½ Cup sugar
1 Tsp lemon juice
1 Tsp vanilla
8 Oz chunky natural applesauce (w/o cinnamon)
½ Cup golden raisins
½ Cup graham cracker crumbs (about 6 full crackers crushed)
2 Tbsp ground cinnamon
Preheat oven to 350. Bring a large pot of water to a boil. Add egg noodles and cook for 6-10 mins., or until al dente; drain. Add the butter to the noodles (I use the hot noodles to melt the butter) Then add sour cream, sugar, lemon juice, vanilla, applesauce, cinnamon and whisked eggs (don't add the eggs earlier or you'll get scrambled) Stir in raisins. Coat a 9 x 13 baking dish with cooking spray. Spread graham cracker crumbs on bottom of prepared pan. Pour/ladle noodle mixture over crumbs. Cover with foil and bake at 350, for 50-60 minutes, or until set. Remove foil for the last 20 minutes or so the top gets golden brown. Serve hot or cold. My favorite temperature to eat kugel is warmed...30-40 seconds in microwave. You will find NO BETTER COMFORT FOOD THAN KUGEL:-) Enjoy it!
