White Cake Cupcakes
Serves: 16-20
Ingredients 
2 ½ cups cake flour, sifted 
1 tablespoon baking powder 
½ teaspoon salt 
½ cup (1 stick) unsalted butter, softened 
1 ½ cups Ideal® No Calorie Sweetener 
4 egg whites, room temperature 
2 1/2 teaspoons brand pure vanilla extract 
1 cup low-fat milk
Directions
1. Preheat oven to 350° F.
2. Grease and flour cupcake pan.
3. In a medium bowl, sift and combine the flour, baking powder and salt.
4. Cream butter at medium speed for 3 minutes, add Ideal® and continue to beat for additional 5 minutes, scraping down bowl.
5. Add egg whites one at a time and mix thoroughly between each egg addition. Mix on medium for 3 minutes.
6. Add vanilla extract until fully incorporated.
7. Add flour mixture alternately with milk (beginning and ending with flour mixture at slow speed).
8. Mix batter on medium speed for additional 5 minutes.
9. Pour into cupcake pan and bake for 24-28 minutes or until toothpick inserted into test cupcake comes out clean.
10. Cool cupcakes in pan 10 minutes and then remove to finish cooling.
11. Frost with Ideal® Chocolate or Buttercream frosting.

No-Dairy Chocolate Cupcakes
Serves: 12
Ingredients 
3 cups all-purpose flour 
2/3 cup unsweetened cocoa powder 
2 teaspoons baking soda 
2 cups Ideal® No Calorie Sweetener 
1 teaspoon salt 
6 tablespoons canola oil 
4 tablespoons olive oil 
3 teaspoons pure vanilla extract 
2 tablespoons cider vinegar 
2 cups cold water
Directions
1. Preheat oven to 350° F.
2. Grease and flour a standard cupcake pan.
3. Sift and mix together flour, cocoa, baking soda, Ideal® and salt.
4. In a separate bowl, whisk together oils, vanilla, vinegar and water.
5. Whisk in dry ingredients and blend until completely free of lumps.
6. Pour batter into prepared cupcake pan.
7. Bake 20-25 minutes or until toothpick inserted in center of test cupcake comes out clean.
8. Cool cupcakes in pan 10 minutes and then remove to finish cooling.
9. Frost with Ideal® Chocolate or Buttercream frosting

Sugar-Free Sugar Cookies
Serves: 32
Ingredients 
1 cup Ideal® No Calorie Sweetener 
½ cup (1 stick) unsalted butter, softened 
1 large egg 
1 teaspoon vanilla 
1 ½ cups flour 
1 teaspoon baking powder 
¼ teaspoon salt

Directions

1. In a mixing bowl, cream together Ideal® and butter; beat in egg and vanilla.
2. Sift together flour, baking powder and salt; add to butter mixture.
3. Blend well until ball is formed.
4. Cover dough and refrigerate 2 hours.
5. Temper dough until soft enough to roll
6. Roll out in between two pieces of parchment paper to 1/8" thickness.
7. Cut into desired shape and set cookies on lightly greased cookie sheets.
8. Bake at 350° F for 8-10 minutes or until edges are lightly browned.
9. Cool slightly on pans, then remove to racks to cool completely.

 

Sugar-Free Buttercream Frosting

Ingredients 

 

 

 

 

 

 

 

 

 

6 tablespoons (3/4 stick) unsalted butter, softened 
2 cups Ideal® Confectionery 
3 tablespoons fat-free milk 
1 teaspoon pure vanilla extract

Directions

1. Beat butter in medium bowl until creamy.
2. Add Ideal® Confectionery, gradually alternating with milk until frosting reaches desired consistency for spreading.
3. Stir in vanilla extract.
