What's Cooking 9/5/08: Jeff's BBQ Sauce and Dry Rub

BBQ Sauce: recipe makes 3 1/2 cups

2 cups of ketchup
1 cup of water
1/2 cup of apple cider vinegar
1/2 cup of brown sugar
1/2 cup of sugar
1/2 Tablespoon of black pepper
1/2 Tablespoon of onion powder
1/2 Tablespoon of ground mustard
1 Tablespoon of lemon juice
1 Tablespoon of Worcestershire sauce

In steam kettle or soup kettle combine all ingredients.  Bring to a boil, reduce heat to a simmer.  While stirring frequently, cook uncovered for 1 1/2 hours.  Remove from heat. Let cool for 2 hours.  Place in 2 quart containers. Label, date and refrigerate.

Dry Rub recipe:

1 1/4 cup white sugar
1 1/4 cup brown sugar
1/3 cup salt
1/2 cup paprika
1/4 cup black pepper

Mix ingredients well in a stainless bowl.  Apply rub mixture to pork ribs or pork roast.  Cover meat and plan in fridge for 2 to 4 hours.  The longer you marinate the better the flavor.  Skin the ribs for maximum flavor absorption.  Place remaining dry rub in sealed baggie for container and place in freezer.

Yields 3 1/2 cups. That is enough rub to season 8-10 slabs of ribs.
