Cannoli Aperti
Deconstructed Cannoli (pastry chips and sweet ricotta dip)

For the cannoli cream-

2 cups of whole milk ricotta cheese
1 cup of mascarpone cheese
1 cup of whipping cream
powdered sugar to taste
1/4 cup of mini chocolate chips
Zest of 1 orange
Pinch of cinnamon
a dash of Vanilla extract or vanilla bean paste
a dash of Amaretto di Saronno

For the Chips

1 package of Eggroll wrappers
Sugar and Cinnamon
Frying oil

Whip the whipping cream until it forms soft peaks, add the ricotta and mascapone.
add powdered sugar until you reach your desired sweetness.
Add the rest of the ingredients and put the mixture in a bowl.

Cut the eggroll wrappers into chip sized rectangles.
Fry them at 350 degrees until brown -
Toss them in a metal bowl with the cinnamon sugar right away so it attaches to the chips.
Serve the chips with the cream and you may also sprinkle the chips with a little powdered sugar before serving!

Great for a Super Bowl Party or Valentine's Day!
