Insalata di Melone


2 cups of Seedless watermelon (cubed)

2 cups of Arugula

3 leaves of fresh mint

2 tbsp of Dancing goat feta cheese

3 tbsp of crispy pancetta or bacon (diced) Dressing -

2 tbsp Balsamic reduction ( take 2 cups of balsamic vinegar and boil until it reduces to a 1/2 cup)

2 tbsp local honey

(Mix honey and balsamic together for your dressing)



Mix melon, arugula and julienned mint - Mix in 1/2 of the dressing Place in bowl and top with feta and pancetta Drizzle the last bit of dressing over the top!
