(WZZM) - Salmon is a very healthy food, rich in Omega 3 fatty acids
It's also the inspiration for an entire festival in Grand Haven next week.

Salmon with Peach and Tomato Salsa
- 4 4-6oz fresh salmon fillets, skin removed salt and pepper
- 1 tsp canola oil
- 1 pound fresh tomatoes, any kind
- 2-3 fresh peaches
- 2 jalapenos
- 2 tablespoons fresh basil, sliced
- 2 tablespoons fresh cilantro
- 1 cup arugula, chopped
- 1 clove garlic, minced
- 2 tablespoons white balsamic vinegar
- 2 teaspoons fresh lemon juice
- 1 avocado, diced
- 2 teaspoons chili powder
Heat a large skillet up over medium high heat. Season the salmon with salt and pepper, swirl the oil around the pan, and place salmon in. Let the salmon sear on that side for about 4 minutes or until golden brown. Turn once, and let finish cooking until just starting to get firm, and golden brown on the other side. Remove from the heat and serve the salmon topped with the salsa.
While the salmon cooks, make the salsa. Cut the tomatoes and peaches into a small dice. Seed the jalapenos and chop. Stir everything together and check seasoning. If you would like to make ahead of time, mix everything up except the avocado, then add that when your ready to serve.
